    List of Ingredients


    • 1 cup flour
    • 1 cup plus 1 Tbls. sugar
    • 1/2 tsp salt
    • 2 eggs
    • 1/2 cup milk
    • 1 Tbls. margarine
    • 2 cups finely chopped rhubarb
    • Oil for frying
    • powdered sugar


    Instructions


    1. In a medium bowl combine the flour, 1 cup sugar and salt.
    2. In another bowl whisk egg yolks, milk and margarine.
    3. Gradually add to the dry ingredients, stirring until smooth.Toss rhubarb with the remaining sugar; gently stir into the batter.
    4. In a mixing bowl, beat egg whites until stiff.
    5. Fold into batter.
    6. In an electric skillet heat oil to 375.
    7. Drop batter by tablespoonfuls into oil.
    8. Fry a few at a time; turning with a slotted spooon until golden brown.
    9. Drain on paper towels.
    10. Dust with powdered sugar.
    11. Serve warm
