    Rhubarb Crunch

    List of Ingredients

    2 cups brown sugar
    2 cups flour
    1 ½ cups quick oats
    1 cup melted oleo
    2 tsp. Cinnamon
    5 cups raw rhubarb, diced
    1 ½ cups sugar
    2 Tbls. Corn starch
    1 cup water
    1 Tsp vanilla

    Recipe

    Mix first 5 ingredients until crumbly. Press ½ on the mixture into a greased 9/13 pan. Cover with the 5 cups of rhubarb. Cook the sugar, cornstarch and water together until thick and clear; remove from heat. Add the vanilla and pour the syrup over the rhubarb. Sprinkle remaining crumbly mixture over top and pat lightly. Bake in a 350-degree oven for 40-45 minutes. Let cool and slice into bars.
