Rhubarb Custard Bars

- CRUST:
- 2 cups flour
- 1/4 cup sugar
- 1 cup margarine
- FILLING:
- 2 cups sugar
- 7 Tbls. flour
- 1 cup whipping cream
- 3 eggs beaten
- 5 cups chopped rhubarb
- TOPPING:
- 1 (8oz) pkg cream cheese softened
- 1/2 cup sugar
- 1/2 tsp. vanilla extract
- 1 cup whipping cream whipped
Instructions
- In a mixing bowl, combine flour and sugar; cut in margarine til mixture resembles coarse crumbs.
- Press into a greased 9x13 pan.
- Bake @ 350 for 10 minutes.
- Meanwhile for filling combine the sugar and flour in a bowl.Whisk in the cream and eggs.
- Stir in rhubarb.
- Pour over the crust.
- Bake @ 359 for 40-45 minutes til set.
- Cool
- For topping beat the cream cheese, sugar, and vanilla til smooth.
- Fold in the whipped cream.
- Spread over the cooled filling.
- Cover and chill. Cut into bars.
- Store in the refrigerator.
