    Rhubarb Custard Bars

    List of Ingredients


    • CRUST:
    • 2 cups flour
    • 1/4 cup sugar
    • 1 cup margarine
    • FILLING:
    • 2 cups sugar
    • 7 Tbls. flour
    • 1 cup whipping cream
    • 3 eggs beaten
    • 5 cups chopped rhubarb
    • TOPPING:
    • 1 (8oz) pkg cream cheese softened
    • 1/2 cup sugar
    • 1/2 tsp. vanilla extract
    • 1 cup whipping cream whipped


    Instructions


    1. In a mixing bowl, combine flour and sugar; cut in margarine til mixture resembles coarse crumbs.

    2. Press into a greased 9x13 pan.

    3. Bake @ 350 for 10 minutes.

    4. Meanwhile for filling combine the sugar and flour in a bowl.Whisk in the cream and eggs.

    5. Stir in rhubarb.

    6. Pour over the crust.

    7. Bake @ 359 for 40-45 minutes til set.

    8. Cool

    9. For topping beat the cream cheese, sugar, and vanilla til smooth.

    10. Fold in the whipped cream.

    11. Spread over the cooled filling.

    12. Cover and chill. Cut into bars.

    13. Store in the refrigerator.
