    Blueberry Snack Cake

    List of Ingredients


    • 2 cups flour
    • 1 1/2 cups sugar
    • 1/2 cup cold butter or margarine
    • 1 tsp. baking powder
    • 1 cup milk
    • 2 eggs; seperated
    • 2 cups fresh or frozen blueberries


    Instructions


    1. In a mixing bowl, combine the flour and sugar.

    2. Cut in the butter until crumbly. Set aside 3/4 cup for the topping.

    3. Add the baking powder, milk and egg yolks to remaining mixture. Blend well.

    4. Beat egg whites until soft peaks form; fold into the batter.

    5. Pour into a greased 9 x 13 pan.

    6. Sprinkle with the blueberries and top with the reserved crumb mixture.

    7. Bake @ 350 for 30-35 minutes or until golden brown.
