Blueberry Snack Cake

- 2 cups flour
- 1 1/2 cups sugar
- 1/2 cup cold butter or margarine
- 1 tsp. baking powder
- 1 cup milk
- 2 eggs; seperated
- 2 cups fresh or frozen blueberries
Instructions
- In a mixing bowl, combine the flour and sugar.
- Cut in the butter until crumbly. Set aside 3/4 cup for the topping.
- Add the baking powder, milk and egg yolks to remaining mixture. Blend well.
- Beat egg whites until soft peaks form; fold into the batter.
- Pour into a greased 9 x 13 pan.
- Sprinkle with the blueberries and top with the reserved crumb mixture.
- Bake @ 350 for 30-35 minutes or until golden brown.
