    Strawberry Rhubarb Coffe Cake

    List of Ingredients


    • 2/3 cup sugar
    • 1/3 cup cornstarch
    • 2 cups chopped rhubarb
    • 1 (10oz) pkg frozen strawberries thawed
    • 2 Tbls. lemon juice
    • CAKE:
    • 3 cups flour
    • 1 cup sugar
    • 1 tsp baking powder
    • 1 tsp. baking soda
    • 1 cup margarine
    • 2 eggs
    • 1 cup buttermilk
    • 1 tsp. vanilla extract
    • TOPPING:
    • 3/4 cup sugar
    • 1/2 cup flour
    • 1/4 cup margarine


    Instructions


    1. In a sauce pan combine sugar and cornstarch; stir in rhubarb and strawberries. Bring to a boil and cok for 2 minutes til thick.Remove from heat and add lemon juice. Cool

    2. For the cake combine flour, sugar, baking powder and soda in a large bowl.

    3. Cut in margarine til mixture is coarse crumbs. Beat the eggs, buttermilk and vanilla together and stir into the crumb mixture til just moist.

    4. Spoon 2/3 of the mixture into a greased 9x13 pan.

    5. Spoon cooled mixture over the batter

    6. Top with remaining batter.

    7. For topping mix together the sugar and flour. Cut in margarine til crumbs are coarse.

    8. Sprinkle over batter.

    9. Bake @ 350 for 45-50 minutes
