    Rhubarb Berry Coffee Cake

    List of Ingredients


    • 1 yello cake mix
    • 2/3 cup brown sugar
    • 2 Tbls. cold margarine
    • 3/4 cup chopped walnuts (optional)
    • 2 eggs
    • 1 cup sour cream
    • 1 1/2 cups chopped rhubarb
    • 1 1/2 cups sliced stramberries
    • 1/2 cup cream cheese frosting


    Instructions


    1. In a bowl, combine 2/3 of the cake mix and sugar.

    2. Cut in the margarine til crumbly.

    3. Add the nuts and set aside.

    4. Place remaining cake mix in another bowl and add the eggs and sour cream to this..

    5. Fold in the rhubarb and strawberries.

    6. Spread into a greased 9x13 baking pan.

    7. Sprinkle with reserved crumb mixture.

    8. Bake @ 350 for 40-45 minutes.

    9. Cool.

    10. Place frosting in a microwave safe bowl and heat for 15 seconds.

    11. Drizzle over cake.
