Chocolate Mint Cookies

List of Ingredients
- 3/4 cup margarine
- 1 1/2 cups brown sugar
- 2 Tbls. water
- 2 cups cocolate chips
- 2 eggs
- 2 1/2 cups flour plus 2 Tbls.
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 boxes Andes Mints
Instructions
- Heat margarine and brown sugar over low heat.
- Add chips and melt. Cool
- Add all other ingredients except the mints.
- Chill 1 hour
- Roll into balls ( not too large )
- Bake @ 350 for 8 - 10 minutes
- Break mints in half and place 1/2 mint on top of each cookie as it is removed from the oven
- Cool before serving
