    Melt in Your Mouth Shortbread

    List of Ingredients

    1 cup butter, softened
    1/2 cup firmly packed brown sugar
    1 teaspoon vanilla extract
    2 1/4 cups flour
    1/2 cup sugar
    1 teaspoon ground cinnamon

    Recipe

    Cream butter, brown sugar, and vanilla in a large bowl with an electric mixer on medium speed until light and creamy. Reduce the speed to low and blend in the flour, scraping the bowl, until smooth.

    Divide the dough in half and shape each into a 6" X 2" log. Wrap each log in plastic wrap and refrigerate for at least 2 hours.
    Preheat oven to 375º.
    Grease two cookie sheets.
    Slice dough into 1/4-inch thick slices and place 1 inch apart on the sheets.
    Bake for 7 to 9 minutes, until the edges are light brown, Let cookies rest on sheets for 5 minutes then transfer to racks to cool.
    Mix the sugar and cinnamon in a bowl and roll the warm cookies in it to coat
