    Chocolate-Mint Meringue Pie

    List of Ingredients




    9" pie baked pie crust or graham cracker crust (graham cracker is really good)
    1 1/4 c. suger
    1/3 c. cornstarch
    1/2 tsp. salt
    3 c. milk
    3 (1 oz.) squares unsweetened chocolate, chopped
    4 eggs, separated
    1 Tbsp. vanilla
    1 tsp. mint extract

    Recipe



    Preheat oven to 400.
    Mix sugar, cornstarch, and salt in a 2-qt. saucepan.
    Stir in milk gradually.
    Add chocolate.
    Cook over med. heat, stirring constantly, until mixture boils and is thick.
    Cook and stir 1 min. Beat egg yolks in a med. bowl.
    Slowly pour 1/2 of choc. mixture into yolks, stirring constantly.
    Stir yolk mixture into mixture in saucepan.
    Bring to a boil over med. heat, stirring constantly.
    Cook and stir 1 min.
    Remove from heat; stir in vanilla and mint.
    Pour into pie shell.
    Beat egg whites ina metal or glass bowl until foamy. Slowly add 1/4 c. sugar, while beating, until stiff peaks form.
    Spreak over pie, covering entirely.
    Bake 5-8 min. or until meringue is golden brown.
    Chill at least 4 hours before serving.
