    Chocolate Caramel Pecan Pie

    List of Ingredients




    Crust:
    2 cups pecan pieces
    1/4 cup sugar
    1/4 cup butter, melted

    Caramel layer:
    One 14-oz. pkg. caramels
    1/3 cup whipping cream
    1 cup pecans, chopped

    Top layer:
    1 pkg. (8 squares) semi-sweet baking chocolate
    1/3 cup whipping cream
    1/4 cup powdered sugar
    1/2 teaspoon vanilla

    For crust, put pecan pieces into food processor. Process until finely ground, using pulsing action. Mix with sugar and melted butter. Press into 9" pie plate. Bake 12 minutes at 350 degrees. (If crust puffs up during baking, gently press down with back of spoon.) Cool completely.

    For caramel layer, melt together caramels and cream. Pour into crust. Sprinkle with chopped pecans.

    For top layer, place all ingredients in saucepan. Cook and stir on low heat just until chocolate is melted. Pour over caramel/pecan layer. Gently spread to cover. Refrigerate at least 2 hours. Makes 10 servings.
