List of Ingredients
- 2 9" pie shells
- 1 1/2 cups raisins
- 1 cup margarine softened
- 1 cup sugar
- 1 cup packed brown sugar
- 6 eggs
- 2 tsp. vanilla extract
- 2-4 tsp. cinnamon
- 1 cup chopped nuts
- 1 cup flake coconut
- handful of chocolate chips
- Cool Whip
Instructions
- Line pie crusts with foil and prebake @ 450 for 10 minutes. Discard foil and cool crusts.
- Place raisins in saucepan covered with water and bring to a boil. Remove from heat and let sit.
- In a mixing bowl cream the maragrine and sugars.
- Beat in the eggs, vanilla, and cinnamon until smooth.
- Drain the raisins.
- Stir in raisins, nuts and coconut. The chips are optional and should be added here if desired.
- Pour into crusts.
- Bake @ 350 for 30-35 minutes, until set.
- Cool.
- Serve with cool whip
