    List of Ingredients


    • 1 1/3 cups sugar divided
    • 1/4 cup corn starch
    • 1 1/2 cups cold water
    • 3 eggs seperated
    • 2 tsp. grated lemon peel
    • 1/4 cup lemon juice
    • 1 Tbls. margarine
    • 1 9" pie shell; baked


    Instructions


    1. In a medium sauce pan combine 1 cup sugar and cornstarch.
    2. Gradually stir in water until smooth.
    3. Whisk in egg yolks. Bring to a boil over medium heat and boil 1 minutes stirring constantly.
    4. Remove from heat abd stir in lemon peel and lemon juice and margarine.
    5. Spoon hot filling into pie shell.
    6. In a small mixing bowl at high speed beat egg whites until foamy.
    7. Gradually beat in remaining sugar; continue beating until stiff peaks form.
    8. Spread meringue evenly over hot filling, sealing to the edge of the crust.
    9. Bake @ 350 for 15-20 minutes or until golden.
    10. Cool on rack.
    11. Refrigerate.
