Lemon Meringue Pie

- 1 1/3 cups sugar divided
- 1/4 cup corn starch
- 1 1/2 cups cold water
- 3 eggs seperated
- 2 tsp. grated lemon peel
- 1/4 cup lemon juice
- 1 Tbls. margarine
- 1 9" pie shell; baked
Instructions
- In a medium sauce pan combine 1 cup sugar and cornstarch.
- Gradually stir in water until smooth.
- Whisk in egg yolks. Bring to a boil over medium heat and boil 1 minutes stirring constantly.
- Remove from heat abd stir in lemon peel and lemon juice and margarine.
- Spoon hot filling into pie shell.
- In a small mixing bowl at high speed beat egg whites until foamy.
- Gradually beat in remaining sugar; continue beating until stiff peaks form.
- Spread meringue evenly over hot filling, sealing to the edge of the crust.
- Bake @ 350 for 15-20 minutes or until golden.
- Cool on rack.
- Refrigerate.
