    Chocolate Mint Ice Cream Dessert

    List of Ingredients


    • 1 cup margarine
    • 1 (10oz) pkg. shredded coconut
    • 1/4 cup packed brown sugar
    • 1/4 cups chopped pecans
    • 4 squares (1oz each) unsweetened chocolate
    • 1 1/2 cups sugar
    • 1 can evaporated milk
    • 1 tsp. vanilla
    • 2 qts. mint chocolate chips ice cream, softened


    Instructions


    1. In a sause pan melt 1/2 cup margarine.

    2. Add the coconut, cook and stir until golden brown.

    3. Remove from heat and stir in brown sugar and pecans. Mix well

    4. Press coconut mixture on the bottom and up the sides of a greased 9x13 pan.

    5. In another sauce pan, melt the chocolate and remaining margarine.

    6. Add the milk and and sugar.

    7. Bring to a slow boil; cook for 5 minutes.

    8. Remove from heat; stirring in the vanilla.

    9. Cool and pour over the coconut mixture.

    10. Spread the ice cream on top.

    11. Freeze over night.

    12. Remove from the freezer 15 minutes before serving.
