Chocolate Mint Ice Cream Dessert

- 1 cup margarine
- 1 (10oz) pkg. shredded coconut
- 1/4 cup packed brown sugar
- 1/4 cups chopped pecans
- 4 squares (1oz each) unsweetened chocolate
- 1 1/2 cups sugar
- 1 can evaporated milk
- 1 tsp. vanilla
- 2 qts. mint chocolate chips ice cream, softened
Instructions
- In a sause pan melt 1/2 cup margarine.
- Add the coconut, cook and stir until golden brown.
- Remove from heat and stir in brown sugar and pecans. Mix well
- Press coconut mixture on the bottom and up the sides of a greased 9x13 pan.
- In another sauce pan, melt the chocolate and remaining margarine.
- Add the milk and and sugar.
- Bring to a slow boil; cook for 5 minutes.
- Remove from heat; stirring in the vanilla.
- Cool and pour over the coconut mixture.
- Spread the ice cream on top.
- Freeze over night.
- Remove from the freezer 15 minutes before serving.
