    List of Ingredients




    21 Thin Mint Cookies
    1 TBS melted butter
    1 qt green mint chip ice cream
    2 C Cool Whip

    Recipe



    Preheat oven to 350º.
    Finely chop cookies, add melted butter and mix well.
    Press into the bottom of 8-in square baking pan.
    Bake for 8 min.
    Cool completely.
    Soften ice cream in fridge for 20 minutes.
    Scoop ice cream into bowl and stir.
    Fold in Cool Whip.
    Spread mixture over crust.
    Cover and freeze 6 hours or overnight.
    Garnish with additional Thin Mints if desired.

    I usually double this recipe to make a 9x13 pan.
