Christmas Twice Baked Potatoes

List of Ingredients
- 4 large russet or baking potatoes
- oil
- 2 Tbls. margarine
- 1/2 cup sour cream
- 1/4 cup milk
- salt and pepper to taste
- 1 (2oz) jar pimentos, drained
- 2 Tbls. ives
Instructions
- Rub potatoes with oil and bake @ 400 for 1 hr. COOL
- Cut in half.
- Scoop out the pulp; leaving 1/4". Save shells
- In a mixing bowl combine the potatoes margarine, sour cream, and milk.
- Stir in salt and pepper and 1/2 of the pimentos and chives.
- Spoon filling into the shells.
- Return to the oven and bake @ 325 for 30 minutes.
- Sprinkle remaining pimentos and chives on top
- Serves 8
