    Christmas Twice Baked Potatoes

    List of Ingredients


    • 4 large russet or baking potatoes
    • oil
    • 2 Tbls. margarine
    • 1/2 cup sour cream
    • 1/4 cup milk
    • salt and pepper to taste
    • 1 (2oz) jar pimentos, drained
    • 2 Tbls. ives


    Instructions


    1. Rub potatoes with oil and bake @ 400 for 1 hr. COOL
    2. Cut in half.
    3. Scoop out the pulp; leaving 1/4". Save shells
    4. In a mixing bowl combine the potatoes margarine, sour cream, and milk.
    5. Stir in salt and pepper and 1/2 of the pimentos and chives.
    6. Spoon filling into the shells.
    7. Return to the oven and bake @ 325 for 30 minutes.
    8. Sprinkle remaining pimentos and chives on top
    9. Serves 8
