    THANKSGIVING: Mom's Oyster Stuffing

    List of Ingredients




    1 cup butter
    1-2 cups chopped celery
    1 cup chopped onions
    1 teaspoon sage
    1 teaspoon thyme
    1 teaspoon salt
    1/2 teaspoon pepper
    1 pint oysters, drain and chop
    1 cup chicken broth
    2 eggs; beaten
    1 lb 2-3 day old bread; cubed**

    Recipe



    Preheat oven to 325 degrees.
    Spray a 3 qt casserole dish, and set aside.
    Melt butter in a saucepan over medium heat.
    Sauté celery and onion till tender.
    Stir in broth, seasoning, eggs and oysters.
    Remove from heat.
    Place bread cubes in a large bowl.
    Pour oyster mixture over and mix to coat.
    Transfer mixture to the casserole.
    Cover and bake for 2 hours.
    Remove the cover the last 30 minutes of baking time for the surface to crisp.

    **In later years Mom used 1-2 bags of Pepperidge Farm Stuffing Mix
