    1 chicken breast (skinned, boned and cubed)
    2 cloves garlic, minced
    1 tbsp. soy sauce
    1 tbsp. dry sherry
    2 tbsp. corn starch
    1 tsp. Hoisin Sauce
    1 tbsp. peanut oil
    20 snow peas (or 1 pkg, of frozen - thawed
    1/2 cup sliced water chestnuts, drained
    1/2 cup hot chicken stock
    1/2 tsp. salt
    1/2 cup unsalted raw cashews

    Recipe



    Marinate chicken for 15 minutes in the garlic, coy sauce, sherry, cornstarch and Hoisin Sauce.
    Then heat oil in uncovered wok to 375 degrees.
    Add chicken mixture and stir fry for 3 minutes.
    Add snow peas and water chestnuts.
    Add stock and salt and stir fry until thickened.
    Stir in the cashews when ready to serve
