    List of Ingredients




    4 medium zucchini
    1 med onion, minced
    1 can of Roasted red pepper, chopped ( used 1 small red pepper)
    1/2 green pepper
    2 cloves of garlic
    1 egg, beaten ( did not use)
    2 sprigs of thyme
    1/4 -1/2 tsp oregano ( used 1/2 )
    salt and pepper
    3/4 pound of beef
    2 Tbs olive oil
    8 slices of cheese ( Gouda and Gruyere reported as being good ) I used Shredded Bristro Blend from Sargento

    Recipe



    Wash zucchini and place in a pot filled with cold water ( do not cut the ends) Bring to a boil and cook until tender about 10-15 minutes.

    Heat the olive oil and saute the garlic first then add the onions,green pepper, red pepper and thyme and oregano. When the veggies begin to soften add the meat, Season with salt and pepper. Drain off any grease and cool.

    When the zucchini is cool enough to handle, cut down the middle and remove some of the pulp, leave a little flesh to create a boat. Add the flesh to the meat mixture along with the egg. Mix well. Fill the boats up, sprinkle with the cheese and bake in a 375 degree oven and bake for 20-30 minutes
