    Good Eats' Rib Eye Steak

    List of Ingredients


    • 1 boneless rib eye steak
    • oil to coat
    • kosher salt and ground black pepper


    Instructions


    1. Place a 10"-12" cast iron skillet in the oven and heat oven to 500.

    2. Bring the steak to room temperature.

    3. When oven reaches temp. remove pan and place on stove over high heat.

    4. Coat the steak with oil and season both sides with salt and and ground on pepper.

    5. Place immediately in the center of the dry pan.

    6. Cook 30 seconds without moving.

    7. Using tongs, turn and cook another 30 seconds.

    8. Put pan back into oven and cook for 2 minutes

    9. Flip steak over and cook 2 more minutes

    10. This is the timing for medium rare steaks.

    11. Add a minute on both sides for medium etc.

    12. Remove steak from pan and cover loosely with foil.

    13. Let rest for 2 minutes.

    14. Serve whole or slice thin and fan onto plate
