List of Ingredients
-2 T. olive oil
-2 8 oz. orange roughy fillets
-flour as needed
-3/4 c. fresh spinach
-1/2 c. white onion, diced
-1/2 c. Virginia ham, diced
-1/2 c. dry vermouth
-1 c. heavy whipping cream
-4 oz. jumbo lump crabmeat
-3 pimento strips
Recipe
-Heat olive oil over medium heat in a large skillet.
-Lightly coat roughy in flour, shake off excess.
-Saute orange roughy until golden brown on both sides.
-Place fillets on serving plates and set aside.
-Discard any remaining oil from the skillet.
-Add the spinach, onion, and ham to the same pan used to cook the fillets.
-Saute until the onions are transparent.
-Stir in the vermouth and heavy cream.
-Stirring constantly, reduce by half.
-Add crabmeat and mix gently until crabmeat is thoroughly heated.
-Pour the sauce equally over the prepared roughy.
-Garnish the top of the sauced fish with the pimento strips.
