    Salmon Cups

    List of Ingredients


    • SALMON CUPS:
    • 3/4 cup corflake crumbs
    • 1/2 cup milk
    • 2 eggs beaten
    • 3 Tbls. margarine
    • 2 Tbls. grated onion
    • 1/2 tsp. garlic salt
    • 1/8 tsp. pepper
    • 2 cups canned salmon
    • CHEESE SAUCE:
    • 2 Tbls. margarine
    • 2 Tbls. flour
    • 1 1/4 cups milk
    • 1/2 cup shredded cheddar cheese
    • 1 small jar drained pimentos
    • 1/8 tsp. minced garlic
    • salt and pepper to taste
    • dash of hot sauce
    • CUCUMBER SAUCE:
    • 1/2 cup diced cucmber
    • 1/2 cup plain yogurt
    • 1/2 tsp. dill weed
    • 1/2 tsp. minced onions
    • 1/4 tsp. horseradish
    • salt to taste


    Instructions


    1. In a bowl combine the salmon cup ingredients. Mix well.

    2. Useing 4 custard cups place them in an 11x7 baking dish.

    3. Press salmon mixture evenly into cups.

    4. Fill baking dish with boiling water 1" deep.

    5. Bake uncovered @ 375 for 25-30 minutes.

    6. CHEESE SAUCE: In a sauce pan melt margarine; stir in flour until smooth;gradually adding the milk.

    7. Bring to a boil and cook til thick.

    8. Add cheese, pimentos, salt, pepper, garlic and hot sauce.

    9. Cook until the cheese melts.

    10. CUCUMBER SAUCE: In a small bowl mix all ingredients together til smooth.

    11. Unmold the cups and serve with your choice of sauces.
