Shrimp Carbonara for One

- 1/2 lb. tiger shrimp, peeled
- Fettucini for one cooked, rinsed and drained
- 1/2 tsp. minced garlic
- 2 eggs beaten
- 1/4 cup cream
- 1/4 cup rich stock ( chicken is ok... seafood is better if you can find it)
- salt and pepper to taste
- 3 Tbls. Olive Oil
- 1/4 cup grated Parmesan Cheese
- 1/4 cup grated Romano Cheese
Instructions
- Heat the oil in a medium pan. Not too hot.
- Put garlic in the pan and let it simmer for a couple of minutes.
- Add the stock and simmer til it reduces to a little over one half
- While the sauce is reducing, salt and pepper the shrimp.
- Turn the heat to medium and add the cream.
- Toss the shrimp with the sauce and spread them out.
- As soon as they appear pink all over, flip them over.
- About 10 seconds after flipping the shrimp dump in the pasta, followed by the egg and cheeses.
- Toss for a minute or two so that the eggs are really cooked.
- Eat and enjoy !!!
