    List of Ingredients




    1 Tbsp. oil
    1/2 medium yellow onion (3/4 cup)
    1 minced garlic clove
    1 medium red bell pepper, finely diced
    2 Tbsp. fresh parsley, chopped
    2 tsp. fresh thyme
    1 bay leaf
    1 lb. lean ground beef
    2 large eggs, lightly beaten
    3/4 cup dry bread crumbs
    1 cup ketchup, divided
    1 Tbsp. worcestershire sauce
    2 tsp. kosher salt
    1 tsp. freshly ground black pepper

    Preheat oven to 350 degrees F.
    Like a baking sheet with parchment paper and oil the paper.
    Saute the onion, garlic and red bell pepper in the 1 tablespoon oil.
    When vegetables have softened and onion is transparent, stir in parsley, thyme and bay leaf.
    Combine the ground beef with the eggs, bread crumbs, 1/2 cup of the ketchup, Worcestershire, salt and pepper.
    Add the onion mixture, being sure to remove the bay leaf. Mix well but gently.
    Turn this mixture out onto the parchment paper-lined baking sheet.
    Form into a loaf.
    Coat meat with the remaining 1/2 cup ketchup.
    Bake for 1 to 1-1/2 hours until done. (The time varies.) Let sit 5 minutes before serving.
