    Cornbread Mexi-Casserole

    -1 pound ground beef
    -16-ounces salsa
    -1 package (8-1/2 ounces) cornbread mix
    -1-1/2 cups shredded cheddar cheese
    -3/4 cup sliced green onions
    -1 small can chopped green chilies, drained (optional)



    Recipe

    -In a skillet brown ground beef. Drain fat.
    -Add 1-1/2 cups salsa.
    -Bring to a boil.
    -Reduce heat and simmer until liquid is reduced, about five minutes.
    -In the meantime, mix together cornbread mix according to package directions.
    Mix in 1 cup cheese, green chilies and onions.
    -Pour mixture into an 8x8-inch greased baking dish.
    -Spoon ground beef into center of cornbread mixture, leaving a one-inch border of cornbread mixture showing on the sides.
    -Bake in a preheated 400-degree oven for 20 minutes.
    -Remove from oven.
    -Top with remaining cheese and slasa.
    -Return to oven until cheese is melted.
