1 large bag Fritos corn chips
1 large can Chile con Carne
2 cans stewed tomatoes
1 can black olives
Green Onions
1 can green chiles (optional)
2 cans whole kernel corn
1 block cheddar cheese, grated
Toppers (optional):
sour cream
guacamole
Recipe
Pour the bag of Fritos into a 9x11 baking dish and set aside.
Place the rest of the ingredients, (including the juice from the corn only), except cheese, in a pot.
Heat thoroughly.
Pour on top of Fritos.
Cover top of chile mixture with cheese and bake in a 350°F oven until cheese is melted.
Top with a dollop of sour cream on each serving and Enjoy!
This is similar to a tamale pie.
