Cheddar Chops Casserole

List of Ingredients
1 cup uncooked rice
6 pork chops
1 tsp. salt
1/4 tsp. pepper
1 medium onion, sliced
1 cup diced green pepper
2 cups (16 oz. can) tomatoes, undrained
1/2 cup water
6 thin slices of American or Cheddar cheeseRecipe
Cook rice according to package directions. Trim fat
from chops. Brown chops in fry pan and season with
salt and pepper.
Spoon cooked rice into large baking dish (13" x 9").
Top with onions and green pepper. Place chops over
vegetables. Pour tomatoes and water over chops. Cover
and bake 1 hour at 350º.
Remove from oven. Add 1/2 cup more water if dry. Place
a cheese slice on each chop. Cover and return to oven.
Turn oven down to 300º and bake 15 more minutes to
melt cheese
