Short Ribs w/ Carmelized Onion & Hoisin

List of Ingredients
-1-½ lb. short ribs
-1 qt. tomato puree
-1 c. balsamic vinegar
-½ c. sherry vinegar
-1 c. hoi sin sauce
-¼ c. soy sauce
-1 T. chipotle Tabasco
-1 T. chopped shallots
-1 T. extra virgin olive oil
-Ground white and black peppercorns
-4 oz. caramelized pearl onions
-2 oz. brown sugar
Recipe
-Preheat oven to 300 degrees.
-Sear short ribs on both sides in olive oil.
-Place into roasting pan.
-Mix rest of ingredients and pour over meat.
-Roast for 4 – 6 hours or until fork tender.
-Serves 4.
**Since this is essentially a glorified pot roast, I think that you could cook this on top of the stove at a very low heat, or even in a microwave. Mine was falling apart tender at 4 hours. I served this with stir fried noodles and peas (snow peas would be good, too).
