    Chicken with Chive Sauce

    List of Ingredients


    • 6 boneless skinless chicken breast halves
    • 4 Tbls. oil
    • 1 cup sliced fresh mushrooms
    • 3/4 cup minced chives
    • 2 Tbls. flour
    • 1/4 cup chicken broth
    • 2 cups half-n-nhalf
    • Pinch of nutmeg
    • salt and pepper to taste
    • Hot cooked rice


    Instructions


    1. In a large skillet brown the chicken in 2 Tbls. oil for 3-4 minutes on each side.
    2. Remove and keep warm.
    3. Saute mushrooms and chives in remaining oil for 2 minutes.
    4. Stir in the flour.
    5. Gradually whisk in the broth until blended.
    6. Stir in the cream, nutmeg and salt and pepper.
    7. Bring toa boil.
    8. Cook and stir for 2-3 minutes, or until thick.
    9. Return chicken pieces to the pan. Turn to coat.
    10. Cover and simmer 7-9 minutes or until juices from the chicken run clear.
    11. Serve over hot rice.
