Fiesta Chicken Drumsticks

List of Ingredients
- 1 Tbls. oil
- 6-8 drumsticks
- 3 green onions; sliced thin
- 1 cup water
- 1 cup uncooked long grain rice
- 2 cans Ro*Tel tomatoes and green chilies
- 1/2 cup shredded cheddar cheese
Instructions
- Heat oil in electric fry pan and cook chicken until golden brown on all sides.
- Remove chicken from pan.(Reserve 2 Tbls. onions for garnish)
- In same pan combine the water, rice, tomatoes, and remaining green onions.
- Bring to a boil.
- Place the chicken over the rice.
- Reduce heat and simmer for 20 minutes covered.
- Top the chicken with the cheese and reserved onions.
- Cover and cook for 5 more minutes til cheese is melted and liquid is absorbed.
