Cheddar Potato Puff

- 5 lbs. potatoes
- 1 tsp.salt
- 3/4 cup margarine
- 2 cups shredded cheddar cheese
- 1 cup milk
- 2 eggs beaten
- Dried chves
Instructions
- Peel and boil potatoes in water with 1/2 tsp salt; cook until tender. Drain
- MAsh potatoes until smooth.
- In a sauce pan melt butter, cheese, milk and remaining salt until smooth.
- Stir cheese sauce into potatoes; fold in beaten eggs.
- Pour into a greased 3 qt. casserole.
- Bake @ 350 for 40 minutes until puffy and golden.
- Sprinkle with chives before serving.
