    John's Bac On Potato Wedges

    List of Ingredients




    2 large baking potatoes
    2 tablespoons olive oil
    1 teaspoon salt
    1 tablespoon onion powder or more to taste
    8 slices good, smoky, thin sliced bacon

    Recipe



    Preheat oven to 450º.
    Scrub and slice the potatoes, lengthwise, into 8 wedges.
    Rinse the potatoes under cold water.
    Dry them, then brush with oil and sprinkle with onion powder and salt.
    Put them on a baking sheet pan.
    Bake at 450 for 20 - 25 minutes, or until they get a little soft, and begin to brown.
    Cut each piece of bacon into 2 strips, lengthwise and wrap around the potatoes. Tuck the bacon ends under the potatoes when putting in the pan.
    Return them to the oven and bake for another 10 - 15 minutes, or, until the bacon turns crisp.
    Serve immediately with sour cream, french onion chip dip or drizzled with your favorite salad dressing such as Ranch, Bleu Cheese etc.
