Three Cheese Potato Bake

List of Ingredients
- 2 2/3 cups chicken broth
- 1/4 cup margarine
- 2/3 cup milk
- salt and pepper to taste
- 2 2/3 cups instant mashed potato flakes
- 1/3 cup shredded Monterey Jack cheese
- 1/3 cup shredded Cheddar Cheese
- 1/3 cup shredded Velveeta cheese
- 2 Tbls. chives.
- Sour Cream is optional
Instructions
- In a large sauce pan combine the broth, margarine,milk, and salt and pepper.
- Bring to a boil and stir in potato flakes.
- Let stand for a minutes and fluff.
- Spread into a greased casserole.
- Top with the three cheeses.
- Bake, uncovered @ 350 for 20 minutes; or until cheese is melted.
- Sprinkle with the chives.
- Serve with sour cream if desired.
