Kileys' Twice Baked Microwave Potatoes

Recipe Introduction

Kiley's notes: I sometimes double the cream cheese and spices for more flavor.I double the mixture but use 6 potatoes.

List of Ingredients

4 medium red potatoes
4 oz cream cheese with chives and onion
1/4 t onion salt
1/4 t salt
1/8 t pepper
1/8 t garlic powder
1/4 C shredded cheese
milk as needed


Recipe

Scrub potatoes and prick several times with a fork.
Place potatoes on microwave safe plate.
Cook on high 14-17 mins or until tender.
Place the rest of the ingredients in mixing bowl.
Cut potatoes in half, scoop center of potatoes leaving 1/4-1/2 inch edge, add to bowl.
Beat and add milk as needed.
Spoon mixture into potatoes.
Cook on high 4-6 minutes.
Sprinkle more cheese on top and cook 30-60 seconds until melted.
