    Potato: Baked German Potato Salad

    List of Ingredients


    • 12 medium red potatoes ( about 3 lbs)
    • 8 bacon strips
    • 2 medium onions, chopped
    • 3/4 cup packed brown sugar
    • 1/3 cup vinegar
    • 1/3 cup sweet pickle juice
    • 2/3 cups water; divided
    • 2 tsp. dried parsley flakes
    • salt and pepper taste
    • 1/2 - 3/4 tsp. celery seed
    • 4 1/2 tsp. flour


    Instructions


    1. In a sauce pan, cook potatoes until just tender; drain

    2. Peel and slice into an ungreased 2 qt baking dish; set aside.

    3. In a skillet, cook bacon until crisp; drain and reserve 2 Tgls. drippings.

    4. Crumble bacon and set aside.

    5. Saute onions in drippings until tender.

    6. Stir in brown sugar, vinegar, pickle juice, 1/2 cup water, parsley, salt, pepper and celery seed.

    7. Simmer, uncovered for 5-10 minutes.

    8. Meanwhile combine the flour abd remaining water until smooth.

    9. Stir into the onion mixture.

    10. Bring to a boil and cook and stir for 2 minutes, or until thick.

    11. Pour over the potatoes.

    12. Add the bacon and genty stir to coat.

    13. Bake uncovered ~350 for 30 minutes.
