Potato: Cajun Potato Salad

List of Ingredients
- 2 lbs. small red potatoes
- 1/2 cup chopped red onions
- 1/2 cup sliced green onions
- 1/4 cup minced parsley
- 6 Tbls. cider vinegar
- 1/2 lb. precooked smoked kielbasa or cajun sausage sliced
- 6 Tbls. oil
- 1 Tbls. dijon mustard
- 1/4 tsp. minced garlic
- 1/4 - 1/2 tsp. cayenne pepper
Instructions
- Cook the potatoes in boiling salted water for 20-25 minutes until tender; drain.
- Cool completely.
- Cut into 1/4" slices and place into a bowl.
- Add onions, parsley and 3 Tbls. vinegar; toss.
- In a skillet, cook sausage in oil for 5-10 minutes, until it begins to brown.
- Remove with a slotted spoon and add to the potato mix.
- To the drippings add mustard, garlic, pepper and remaining vinegar.
- Bring to a boil, whisking constantly.
- Pour over the salad and toss.
- Serve immediately.
