Potato: Grandma’s Potato Salad - Large Batch

List of Ingredients
3 pints mayonnaise
1/4 cup packed brown sugar
1 T sugar
1-1/2 t vanilla extract
1/2 t prepared mustard
1/2 cup milk
10 pounds potatoes - cooked and cubed
12 hard boiled eggs - chopped
4 celery ribs - chopped
5 radishes - sliced
1 medium onion - chopped
1/3 cup green pepper - chopped
Salt and pepper to taste
Leaf lettuce
Paprika
Minced fresh parsley
Recipe
In a large bowl, combine the mayonnaise, sugars, vanilla, and mustard.
Stir in milk.
Gently fold in the potatoes, eggs, celery, radishes, onion, green peppers, salt and pepper.
Chill overnight
Serve in a lettuce lined bowl.
Sprinkle with paprika and parsley.
Yield: 6 quarts
