    Potato: Grandma’s Potato Salad - Small Batch

    List of Ingredients

    2 cups Mayonnaise
    1-1/2 Tbsp Packed Brown Sugar
    1 tsp Sugar
    1/2 tsp Vanilla
    1/8 tsp Prepared Mustard
    1/8 cup Milk
    3 lbs Potatoes, cooked and cubed
    4 Hard Boiled Eggs, chopped
    1/3 cup Celery, chopped
    2 Radishes, sliced
    1/8 cup Onion, chopped
    1/8 cup Green Pepper, chopped
    Salt & Pepper, to taste
    Leaf Lettuce
    Paprika
    Minced Fresh Parsley

    Recipe

    In a bowl, combine the mayonnaise, sugars, vanilla & mustard.
    Stir in milk.
    Gently fold in the potatoes, eggs, celery, radishes, onions, green peppers, salt & pepper.
    Chill overnight.

    Serve in a lettuce-lined bowl.
    Sprinkle with paprika & parsley.

    Yield: 2 quarts
