    Grilled Eggplant Subs

    List of Ingredients


    • 1 Japanese eggplant
    • 1 red onion
    • salt
    • sub rolls
    • BALSAMIC VINEGAR MARINADE:
    • 1 crushed garlic clove
    • 1/4 cup balsamic vinegar
    • 1/2 cup olive oil
    • PESTO MAYONAISE:
    • 1/2 cup fresh basil leaves
    • 2 Tbls. mayo
    • 1 tsp parmesan cheese


    Instructions


    1. Slice eggplant into 1/2" rings. Lightly salt the eggplant. Place on a wire rack and set a cookie sheet on top. Place a couple of canned goods on top of sheet to add weight. Let sit for an hour. (This is to reduce the bitterness in the eggplant)

    2. Slice the red onion and simmer it in some of the vinegar marinade till onions become soft.

    3. Brush eggplant with remaining marinade and grill till golden brown

    4. Chop the basil leaves and add cheese and mayo to deired consistency.

    5. Spread mayo mixture on sub rolls

    6. Top with eggplant and onions.
