Grilled Eggplant Subs

- 1 Japanese eggplant
- 1 red onion
- salt
- sub rolls
- BALSAMIC VINEGAR MARINADE:
- 1 crushed garlic clove
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
- PESTO MAYONAISE:
- 1/2 cup fresh basil leaves
- 2 Tbls. mayo
- 1 tsp parmesan cheese
Instructions
- Slice eggplant into 1/2" rings. Lightly salt the eggplant. Place on a wire rack and set a cookie sheet on top. Place a couple of canned goods on top of sheet to add weight. Let sit for an hour. (This is to reduce the bitterness in the eggplant)
- Slice the red onion and simmer it in some of the vinegar marinade till onions become soft.
- Brush eggplant with remaining marinade and grill till golden brown
- Chop the basil leaves and add cheese and mayo to deired consistency.
- Spread mayo mixture on sub rolls
- Top with eggplant and onions.
