Chicken Noodle Soup

List of Ingredients
-3 Tablespoons oil
-3 Tablespoons butter
-3 boneless chicken breasts (cubed)
-1 large onion (diced)
-1 large potato (diced)
-5 large garlic cloves (minced)
-5 ribs celery (diced with greens)
-2 cans Veg-all Regular size vegetables
-1 can green peas
-6 cups chicken broth
-3-4 cups water (or more to suit consistency you like)
-1/2 bag smallest egg noodles (broken up)
-1 can Cream of Celery soup
-1 can Cream of Chicken w/Herbs soup
-fresh parsley (small bunch-chopped)
-fresh thyme (leaves from 3 stripped stems)
-fresh sage (8 leaves-chopped)
-fresh chives (as desired)
-salt
-pepper
Recipe
-Brown cubed chicken in oil and butter.
-Add onion, potato, celery and garlic and saute until slightly tender.
-Add canned veggies, water and broth.
-Add herbs, salt and pepper.
-Continue to simmer until flavors make you happy, when tasted. (This step, I enjoy the most.)
-Next add noodles and simmer.
-Add soups and stir all to blend.
-Adjust seasonings to your taste.
-Enjoy!!
