    Chicken and Wild Rice Soup

    List of Ingredients


    • 2 Qts. chicken broth
    • 1/2 lb. fresh mushrooms, chopped
    • 1 cup shredded carrots
    • 1/2 cup chopped onions
    • 1 tsp. chicken bouillon granules
    • 1 tsp. parsley flakes
    • 1/2 tsp. celery salt
    • 1/4 tsp. garlic powder
    • 1/4 tsp. thyme
    • 1/4 cup margarine
    • 1/4 cup flour
    • 1 can cream of mushroom soup
    • 3 cups cooked wild rice
    • 2 cups cooked, cubed chicken


    Instructions


    1. In a large sauce pan combine the first 9 ingredients.
    2. Bring to a boil and simmer 30 minutes.
    3. In a large soup kettle, melt the margaine and stir in the flour until smooth.
    4. Gradually whisk in the broth mixture.
    5. Bring to a boil and cook until thick (about 2 minutes)
    6. Add rice and chicken; heat through.
    7. Serve immediately
    8. 12 Servings
