Chris' Potato n Leek Soup with Sausage

List of Ingredients
1 tablespoon butter and
1 tablespoon olive oil
1 small onion chopped
2 med leeks chopped
2 med potatoes cubed
16 ounces Chicken broth
3 med Sweet Italian Sausages, cut into "coins" and fried (save the drippings)Recipe
In a large sauce pan ( I used my stew pot)
Put 1 tablespoon butter and 1 table spoon Olive oil.
Heat and add the onions and leeks and saute until tender but not brown.
Add the potato and cook for 2 minutes.
Add the broth and the cooked sausage and drippings.
Cook until potatoes are tender about 10 to 12 minutes.
