Corn and Crab Chowder

List of Ingredients
- 1 Tbls. oil
- 2 Tbls. margarine
- 2 potatoes; peeled and diced
- 2 ribs celery chopped*
- 1 onion chopped
- 1 small red pepper seeded and diced
- 1 bay leaf
- salt and pepper to taste
- 1 Tbls. Old Bay Seasoning
- 3 Tbls. flour
- 2 cups chicken broth
- 1 qt milk
- 3 cups corn frozen
- 1 pkg imitation crab meat shredded
- 4 Bread bowls 6" ones
Instructions
- Heat a large soup kettle; add oil and butter.
- Add in chopped vegetables.
- Add in bay leaf.
- Season veggies with salt, pepper and Old Bay. Saute 5 minutes.
- Sprinkle flour on top and cook 2 minutes stirring constantly.
- Stir in broth and combine through.
- Stir in milk. Bring to a bubble and add corn and crab.
- Taste to adjust seasonings if needed.
- Remove bay leaf
- Serve in bowls or bread bowls.
- You can garnish with oyster crackers, hot sauce and/or scallions if desired.
