    List of Ingredients


    • 1 Tbls. oil
    • 2 Tbls. margarine
    • 2 potatoes; peeled and diced
    • 2 ribs celery chopped*
    • 1 onion chopped
    • 1 small red pepper seeded and diced
    • 1 bay leaf
    • salt and pepper to taste
    • 1 Tbls. Old Bay Seasoning
    • 3 Tbls. flour
    • 2 cups chicken broth
    • 1 qt milk
    • 3 cups corn frozen
    • 1 pkg imitation crab meat shredded
    • 4 Bread bowls 6" ones


    Instructions


    1. Heat a large soup kettle; add oil and butter.
    2. Add in chopped vegetables.
    3. Add in bay leaf.
    4. Season veggies with salt, pepper and Old Bay. Saute 5 minutes.
    5. Sprinkle flour on top and cook 2 minutes stirring constantly.
    6. Stir in broth and combine through.
    7. Stir in milk. Bring to a bubble and add corn and crab.
    8. Taste to adjust seasonings if needed.
    9. Remove bay leaf
    10. Serve in bowls or bread bowls.
    11. You can garnish with oyster crackers, hot sauce and/or scallions if desired.
