List of Ingredients
-1 pound ground beef, browned and drained
-2 cans Chili Hot beans or pinto beans
-2 cans tomatoes, undrained-,like Rotel
-2 cans corn, undrained
-1 envelope taco seasoning mix
-1 envelope ranch dressing mix
-4 oz. Velveeta, cut into cubes
Serve with:
4 oz. Shredded cheddar cheese
Fritos or Fritos scoops
Recipe
-Place everything except Velveeta into a large kettle and mix well.
-Do not drain any of the cans because it is the juices from the cans that make the liquid in the soup.
-Heat to boiling and let it simmer for a while.
-You can add more liquid if you want , but it isn’t necessary.
-At the end of the cooking time, add the Velveeta and stir to melt.
-This can be made on top of the stove or cooked all day on low in the crockpot.
-Ladle soup into bowls.
-Sprinkle shredded cheddar cheese on top of each bowl of soup.
-Serve with Fritos.
**
-We like spicy stuff and you can add chopped jalapeno peppers to your bowl of soup.
