    Corn: Corn Puddin 2

    List of Ingredients


    • 4 eggs separated
    • 2 Tbls. margarine
    • 1 Tbls. sugar
    • 1 Tbls. brown sugar
    • 1 tsp salt
    • 1/2 tsp. vanilla extract
    • pinch of cinnamon and nutmeg
    • 2 cups whole kernel corn
    • 1 cup half-and-half
    • 1 cup milk


    Instructions


    1. In a mixing bowl, beat the egg yolks until thick and lemon colored (about 5-8 minutes)

    2. Add butter, sugars, vanilla, cinnamon and nutmeg. Mix well.

    3. Add corn.

    4. Stir in cream and milk.

    5. Beat egg whites until stiff; fold in yolks. Add to corn mixture and blend through.

    6. Pour into a greased casserole dish.

    7. Bake, uncovered, at 350 for 35 minutes or until center is set.

    8. You might need to cover loosely the last 10-15 minutes to prevent top from over browning.
