Corn: Corn Puddin 2

- 4 eggs separated
- 2 Tbls. margarine
- 1 Tbls. sugar
- 1 Tbls. brown sugar
- 1 tsp salt
- 1/2 tsp. vanilla extract
- pinch of cinnamon and nutmeg
- 2 cups whole kernel corn
- 1 cup half-and-half
- 1 cup milk
Instructions
- In a mixing bowl, beat the egg yolks until thick and lemon colored (about 5-8 minutes)
- Add butter, sugars, vanilla, cinnamon and nutmeg. Mix well.
- Add corn.
- Stir in cream and milk.
- Beat egg whites until stiff; fold in yolks. Add to corn mixture and blend through.
- Pour into a greased casserole dish.
- Bake, uncovered, at 350 for 35 minutes or until center is set.
- You might need to cover loosely the last 10-15 minutes to prevent top from over browning.
