Zucchini: Cheesy Zucchini, Squash and Tomatoes

List of Ingredients
1 small onion, cut in half and thinly sliced
2 cloves garlic, minced
3 zucchini, cut in half lengthwise and sliced
3 -4 yellow squash, cut in half lengthwise and sliced
4-5 small tomatoes, thinly sliced
1-1/2 cups shredded Parmesan Cheese (can use mozzarella, cheddar, Romano, etc.)
1/4 cup butter
Olive Oil
Sea Salt
Fresh Cracked Pepper
Basil, oregano or Italian Seasoning
Recipe
Preheat oven to 350. Coat 2-1/2 quart baking dish with cooking spray. Saute onion and garlic in olive oil 5 minutes. Do not brown.
In a bowl, combine zucchini & squash – drizzle with a just a little olive oil to lightly coat. Layer in baking dish: Zucchini & squash – onion/garlic – tomato – salt & pepper – shredded cheese. Repeat layers. Dot with butter. Sprinkle with basil on top.
Bake, covered, for 35-45 minutes. Remove lid and bake uncovered 10-15 minutes or until vegetables are desired doneness and top is brown. Note: if using shallow dish, put on cookie sheet in case it runs over.
