Zucchini: Zucchini-Mushroom Bake

List of Ingredients
-1 T. plus 1 teas. oil, divided
-½ c. chopped onion
-2 garlic cloves, minced
-2 c. thinly sliced zucchini
-1 c. sliced mushrooms
-½ c. diced red bell pepper
-½ teas. basil
-¼ teas. salt
-¼ teas. pepper
-4 eggs
-½ cup Monterey Jack cheese, divided
Recipe
-Preheat oven to 400F.
-In 12” skillet heat 1T. oil, add onion & garlic, sauté until onion is translucent.
-Add zucchini, mushrooms, red pepper & seasonings.
-Stirring constantly sauté until vegetables are tender crisp, about 5 minutes; remove from heat.
-In medium bowl beat eggs; add 2 1/4 cup cheese and the sautéed vegetables & stir to combine.
-Grease an 8x8x2 inch baking dish with remaining teaspoon oil; transfer vegetable mixture to dish & sprinkle with remaining ¼ cup cheese.
-Bake 24 – 30 minutes ( until puffy & browned & a knife inserted in center comes out clean).
