Recipe Introduction
This chicken soaks up the flavors of a spicy barbecue based sauce, enhanced with balsamic vinegar. The sauce has a nice peppery bite, you can decrease the pepper if you like your barbecue mild, or increase it up to 4 tablespoons if you love "hot stuff".
List of Ingredients
For the sauce: (8 cups)
-4 cups of butch barbecue sauce or your favorite BBQ sauce
-1 cup of balsamic vinegar
-1 1/4 cups of Worcestershire sauce
-3/4 cup of Dijon Mustard
-1/2 teaspoon of salt
-1 tablespoon of black pepper
-3/4 cup of canola or other mild flavored vegetable oil
-3/4 cup of olive oil
For the chicken:
-6 chicken breast halves (bones in and skin on)
-salt and pepper to taste
Recipe
-To make the sauce, combine all of the ingredients in a large bowl and stir well.
-Reserve 2 cups for the marinade and store the remainder in a covered container in the refrigerator.
-Put the chicken breasts in a shallow ovenproof dish large enough to hold the chicken in a single layer.
-Season lightly with salt and pepper and pour the 2 reserved cups of sauce over them.
-Cover the dish with foil and place in the refrigerator for 1 hour to marinate the chicken.
-About 20 minutes before you plan to cook the chicken, preheat the oven to 400ºF.

-Turn the breasts over and bake for an additional 15 - 20 minutes or until the chicken is fully cooked.
