Mario Andretti’s Nona Rina’s Zucchini Eggplant Casserole

List of Ingredients
2 eggplants; unpeeled and cubed
3 small zucchini; unpeeled and cubed
1/3 cup olive oil
2 large onions, thinly sliced
2 green peppers, chopped
3 tomatoes, peeled and chopped
To taste: salt, pepper, Accent, Garlic Salt
1 Tbls. Parsley
Pinch of grated nutmeg
½ cup grated Parmesan Cheese
3 Tbls. Tomato sauce
4 slices Swiss or Muenster Cheese
Recipe
Sauté the onions and green pepper in the oil. Add the eggplant, zucchini, tomatoes, tomato sauce, & cook a little more until the veggies are a little soft. Mix in the Parmesan and spread the entire mixture on the bottom of a casserole dish. Bake at 350 degrees for 30 minutes. Place the 4 slices of cheese over top of the casserole and bake 5-10 more minutes until cheese is melted!
