Barbara Boxer's Lemon Blueberry Muffins

-2 cups of flour
-2/3 cup of sugar
-1 teaspoon of baking powder
-1 teaspoon of baking soda
-1 cup of lemon yogurt
-1/2 teaspoon of salt
-1/4 cup of butter/margarine, melted
-1 egg, lightly beaten
-1 to 2 teaspoons grated lemon peel
-1 teaspoon of vanilla
-2 cups of blueberries, fresh or frozen
Recipe
-Preheat oven to 400ºF.
-Combine dry ingredients in large bowl.
-Stir in blueberries.
-In separate bowl, blend wet ingredients, including lemon peel.
-Add wet to dry and stir until just combined, do not over mix.
-Fill greased muffin cups and bake for 20 to 25 minutes or until cake tester inserted in center of one muffin comes out clean.
-Cool on rack for five minutes before removing from pan; finish cooling on rack.
*Makes: 12 muffins
