Recipe Introduction
The Governor and Mrs. Ridge would like to share with you a family favorite recipe. The Governor and his father always favored this as a first course for Thanksgiving dinner and often worked together to prepare this tasty treat for the whole family to enjoy.
Since it has been quite sometime since the Governor's dad has joined them, this recipe has become a family tradition and a fond memory of the many happy years they had with him.
We hope that after one taste, this "Fresh Mushroom Soup" will become your favorite family tradition as well.
List of Ingredients
-6 Tablespoons butter
-2 cups finely minced yellow onions
-1/2 teaspoon sugar
-1 pound fresh mushrooms
-1/4 cup flour
-1 cup water
-1-3/4 cup chicken broth
-1 cup Dry Vermouth
-1 teaspoon salt
-1/4 teaspoon pepper
Recipe
-In a large saucepan melt butter and cook onions and sugar slowly until golden, about 30 to 45 minutes.
-Slice 1/3 of the mushrooms and finely chop the rest.
-Add all mushrooms and saute for 5 minutes.
-Stir in flour until smooth.
-Cook for 2 minutes, stirring constantly.
-Pour in water and stir until smooth.
-Add remaining ingredients and heat to boiling, stirring constantly.
-Reduce heat and simmer uncovered 10 minutes.
*Note: May be prepared in advance, refrigerated, and reheated (covered) over low heat for 10 minutes.
